Let me start this post by telling you how thrilled I am to share this doughnut recipe with you. These doughnuts are soft and tender. They are dipped in an espresso glaze. They are delicious. And, most importantly, they are baked! Can you believe it? These babies are baked, not fried, which means you can eat more and not feel guilty. At least that’s what I keep telling myself.
I love a good doughnut, especially one that goes well with my cup of coffee. These fit the bill perfectly. They are good for dunking in your coffee or milk, or just eaten alone with drink in hand. Either way, this recipe is super simple and easy to make. You can have them on your breakfast table in less than an hour. Hint, hint…that means you should make a batch this weekend!
- For the doughnuts:
- 1 cup flour
- ½ cup sugar
- ¼ cup cocoa powder
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp espresso powder
- ¼ tsp salt
- 1 egg
- ½ cup milk
- ¼ cup plain, non-fat Greek yogurt
- ¼ cup butter, melted and cooled
- 1 tsp pure vanilla extract
- For the glaze:
- 2 cups powdered sugar
- 5 Tbsp milk
- 1 tsp espresso powder
- 1 tsp pure vanilla extract
- Preheat the oven to 375 degrees. Spray a doughnut pan with non-stick baking spray and set aside.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, espresso powder and salt. In a small bowl, beat together the egg, yogurt, milk, butter and vanilla.
- Stir the wet ingredients into the dry ingredients until combined. Spoon the batter into the wells of the doughnut pan, filling each about ¾ full.
- Bake the doughnuts for 9-10 minutes, or until the tops spring back when you touch them.
- Allow the doughnuts to cool in the pan for about 5 minutes, then remove them from the pan and set them on a cooling rack to finish cooling completely.
- To make the glaze, whisk all of the ingredients together in a small bowl. Dip the cooled doughnuts fully into the glaze to coat them completely. Allow them to rest on a wire rack until set.
