Honey Almond Challah Bread Recipe

Ingredients
  • Bread
  • ¾ Cup - Bob's Red Mill Natural Almond Meal
  • ½ Cup - Sugar
  • 1 Cup - 2% or Whole Milk
  • 4.5 Tsp - Active Dry Yeast (Equals 2 Packets)
  • ½ Cup - Honey
  • 4 - Egg Yolks
  • 5 Cups - All Purpose Flour (Sifted)
  • 2 Sticks - Unsalted Butter (Equals 16 TBSP)
  • Egg Wash
  • 1 - Egg Yolk
  • 1 Tsp - Milk
  • 1 Tsp - Honey
  • 2 TBSP - Slivered Almonds
Instructions
  1. Combine sugar and almond meal by whisking.
  2. Heat milk to 100 F Degrees.
  3. Add yeast to top of sugar and almond mixture. Do NOT stir in.
  4. Pour milk over mixture and yeast. Allow to foam for approximately 15 minutes.
  5. Whisk in melted butter, honey, and egg yolks until combined.
  6. Slowly add in flour one cup at a time until 4.5 cups have been added. Thoroughly combine between each addition of flour. (Easiest to use a stand mixer with a dough hook.)
  7. When dough has become sticky, turn out onto counter and finish incorporating the ½ cup of leftover flour by kneeding.
  8. Place dough into a well greased bowl. Cover with a damp towel and allow to rise in a warm spot 3-4 hours. Dough should double in size.
  9. Once doubled, punch dough down, and set aside while prepping your work area.
  10. Turn dough out onto work surface and divide into three equal parts.
  11. Roll each part into a 2ft+ long ropes.
  12. Press 3 ends together and make a tight braid.
  13. Wrap the braid around itself to form a ball, and close ends by pressing together.
  14. Cover, and allow to rise another hour.
  15. In the meantime, preheat oven to 350 F degrees.
  16. Mix your egg wash ingredients together with a whisk.
  17. Place dough on non-stick baking sheet, or wax paper.
  18. Brush egg wash over entire surface and sides.
  19. Sprinkle with sliced almonds.
  20. Bake for 50-55 minutes. (Gas oven.)
  21. Serve warm with additional honey.
